Deisi Valeria is studying Culinary Art and won the international scholarship to study for a semester at the Universidad Pontificia Bolivariana in Colombia.

When you entered Uni, did you know there were international programs?

No, I was unaware that this program existed for international scholarships.

At what point and why did you start thinking about applying for a scholarship and studying in another country?  

I learned about this program in my second semester, however, I thought about applying in my fifth semester. I was very excited to get to know another country.

Why did you decide to study in that country?

Because Colombia called my attention, from the culture, gastronomy and society.

How was the scholarship application process?

The process was quite simple, you only have to fill out a form on behalf of the University of Celaya and meet certain requirements that are required; they support you in everything. 

How did you prepare for this new experience?

As a 9th semester student, I had to prepare all my requirements for graduation, such as my internship, social service, and also, I had to look for too much information to live in Colombia.

How did you feel when you arrived in the new country?

I was very excited and at the same time quite scared because I did not know if it would be a good experience, if the country would be as I imagined it would be, but it was really a very good experience.

How have you been received at the university where you arrived?

Everyone was too kind, like a second family, they welcome you with open arms.

What do you miss the most about Mexico and UNI?

From Mexico I missed my family and the food.

What is the most exciting thing you have experienced so far in this experience? And the most difficult?

The most difficult thing was to arrive in a country so different from yours, the fear of an experience being so far away from your homeland and the most exciting thing is all the places I have had the opportunity to know and the friendships I have made.

How do you think this experience will influence you as a person and professionally?

For the professional side I feel that winning an international scholarship gives you a good opportunity to put it on your CV and for me, it made me understand very important things in life, it gives you a bigger vision of the things you can achieve.

What advice would you give to those who are about to go on exchange to another country?

They should be prepared in the best possible way before leaving, and be open to all possibilities.

Would you recommend these opportunities offered by UNI to your colleagues?

University of Celaya inaugurates Automation Cell for Industry 4.0

Celaya, Guanajuato (November 11, 2023) - The University of Celaya celebrated the inauguration of the I4.0 AUTOMATION CELL at the Center for Innovation in Engineering on Saturday, November 11, as part of the 35th anniversary of its founding. Carlos Esponda Morales, General Director of the University of Celaya System, Dr. Martha Aguilar Trejo, Rector of the institution, and Mr. Juan Yúdico Herrasti, Councilor of the eastern region of Fundación Empresarial Guanajuato, presided over the ribbon cutting ceremony that marked the beginning of this new stage in the educational field.

The acquisition of the I4.0 AUTOMATION CELL was made possible thanks to a co-investment of 30% from FIDESSEG and 70% from the University of Celaya, which represents a milestone in engineering education in Mexico. Bosch Rexroth's one-of-a-kind XITE Automax 600 equipment incorporates Industry 4.0 technologies, artificial intelligence, big data and the cloud in its automated processes.

Representatives of companies from the industrial sector such as BOSCH LATINOAMERICA, GKN, PRETTL, SKILLTECK, HUTCHINSON, IECA, as well as elementary school educators, academic directors, teachers and students, joined in this event. Also present were leaders of the STEM and PERAJ social programs, as well as student mentors and the children who are the raison d'être of these programs, accompanied by their mothers.

The AUTOMATION CELL I4.0, with the Automax equipment, will not only enrich the education of the students of the University of Celaya, but will also have a positive impact on the education of more than 300 children participating in the project "Integral Development of Celaya's Children", which integrates the institutional programs STEAM and PERAJ, bringing educational innovation to the community.

At this event, the UniElectric Car, an electric vehicle developed by students who participated in the "Towards Electric Mobility" competition, was also on display, highlighting the commitment of the University of Celaya to the integral and avant-garde education of its students.

The I4.0 AUTOMATION CELL not only represents a significant technological advancement for the University of Celaya, but also demonstrates a continued commitment to academic excellence and preparing students for the challenges of the future.

UniBocuse d'Or 5th edition

UniBocuse d'Or 5th edition

Inspired by the Bocuse d'Or culinary competition, designed in 1987 by renowned chef Paul Bocuse, which brings together the most promising culinary talents from around the world, the fifth edition of the UniBocuse d'Or was presented to test, through a concept, the technical and creative skills of culinary art students.

On this occasion, the competition was based on the parameters of Nouvelle cuisine, which refers to the following commandments:

Freshness: Using fresh and seasonal ingredients is fundamental in nouvelle cuisine.
Simplicity: The aim is to simplify the preparation of dishes, avoiding heavy sauces and garnishes.
3. Portion sizes: Portions are smaller and focus on quality over quantity.
4. Presentation: Great attention is paid to the aesthetics of the dishes, with elegant and creative presentations.
5. Innovation: Creativity is key, encouraging new flavor combinations and culinary techniques.
6. Respect for tradition: Despite the innovation, the basis of classic French cuisine is respected.
7. No overcooking: Ingredients are cooked precisely to maintain their flavor and texture.
8. Light sauces: Lighter sauces and reductions are used instead of heavy sauces.
9. Less fat: The use of butter and heavy fats is reduced compared to classic cooking.
10. Personal expression: Chefs can express their personal style and creativity in each dish.

To advance to the finals held on October 19, the students had to design a savory and a sweet dish, standardize the recipe for both dishes, generate a sketch of an idea to present on the day of the contest, and finally produce the dish and present it to the judges.

The experts who served as judges for the competition were professionals with an important trajectory in the gastronomic sector:
César Enciso: Executive Chef at the Rosewood San Miguel de Allende, an ultra-luxury hotel internationally recognized for the quality of its service.
Samuel Ruvalcaba: Executive Chef of the Belmond Sierra Nevada Hotel, recently acquired by LVMH Moët Hennessy Louis Vuitton.
Carlos Solís: Executive Chef of Mezzé Restaurant and who develops innovative projects in different gastronomic establishments of the group.

The Importance of Food Safety

Did you know that there are more than 250 different diseases that are transmitted by contaminated food and beverages? How many times a year do you get sick to your stomach? Do you know what was the mistake that caused that annoying illness?

The WHO estimates that every year some 600 million people - almost 1 in 10 of the world's population - fall ill and 420,000 die from contaminated food.

It is essential that people know about the subject, we all eat about three times a day, but many times we do not know the correct handling of food.

This is especially important for the food industry and food service, as contaminated food causes losses in the millions in shrinkage, recalls, lost productivity and medical expenses. One case of food poisoning can make thousands of people sick.

The reputation of a company and its brand can be lost in minutes due to a case of food poisoning that its customers or diners share on social networks and goes viral. In addition, businesses can be fined and shut down.

But enough of the bad news. Now let's talk about the solution. PREVENTION is the key, i.e. not allowing food or its ingredients to become contaminated in the first instance, with well-designed and implemented control measures.

Fortunately, there are nowadays food safety management systems designed specifically for the food sector, which provide us, so to speak, with a step-by-step recipe to ensure that food companies never have intoxicated customers.

These systems have been improving practices over time in the food industry, from Good Manufacturing Practices, HACCP and systems approved by the Global Food Safety Initiative (GFSI). They have incorporated new Prerequisite Programs such as Allergen Control and Food Fraud prevention, and have evolved in accordance with the needs of society and the global challenges that arise. Nowadays it is essential to be updated and take care of food safety throughout the food chain for the protection of consumers.
